Banana Bread

A coworker of mine who cooked and experimented with recipes would always bring in her experiments and want feedback on the recipes. I liked the test product enough to ask for the recipe and have been making it since. The simplicity of the recipe and ingredients just made it so easy to make on a regular schedule.


Ingredients:

  • 2–3 very ripe bananas
  • 2 eggs
  • 1¾ cup unsifted flour
  • 1¼ cup sugar
  • ¼ cup vegetable oil
  • ¼ cup honey
  • 2 heaping tbsp plain yogurt
  • ¼ cup milk
  • 1 tsp baking soda
  • 1 tsp vanilla
  • ½ tsp salt
  • 1 cup chopped walnuts

Directions:

  1. Preheat oven to 325°F.
  2. Grease 9 x 5-inch loaf pan.
  3. Combine all ingredients and mix well with hand mixer.
  4. Transfer to prepared pan.
  5. Bake until top is golden brown and splits slightly, usually about 1 hour and 20 minutes.
