Seasonal Salad

This is the one dish that my mom and I make for every (literally, EVERY) family event. We both have a love for fresh vegetables and just can't seem to get enough of them! My mom found the original recipe in a newspaper about 10 years ago and has adapted the ingredients throughout the years. For instance, the salad was originally called the winter salad and calls for apples, cranberries, and walnuts. But in the summer and spring we substitute the apples and cranberries with strawberries, and the walnuts with almonds. In the fall we typically stick with the winter salad ingredients. It's adaptable year-round and can be altered for whatever you have a taste for or whatever you have in the fridge :)


Ingredients:

Summer/Spring Salad

  • 8 cups greens (anything from spinach leaves, red leaf lettuce, romaine, or any combination of greens you like)
  • 1 medium red onion
  • Crumbled blue cheese
  • Strawberries
  • Almonds

Winter/Fall Salad

  • 8 cups greens (anything from spinach leaves, red leaf lettuce, romaine, or any combination of greens you like)
  • 1 medium red onion
  • Crumbled blue cheese
  • Apples (of your choice)
  • Cranberries or craisins
  • Walnuts

Dressing

  • ¾ cup olive oil
  • 3 tbsp lemon juice
  • 3 tbsp sherry wine vinegar
  • 1 tbsp Dijon-style mustard
  • ⅛ tsp salt
  • ⅛ tsp pepper

Directions:

  1. Purchase all ingredients, depending on what type of salad you are looking to make.
  2. Chop greens, red onion, and strawberries/apples.
  3. Mix greens, red onion, blue cheese, strawberries/apples, almonds/walnuts, and cranberries (if desired) into a large bowl.
  4. In screw-top jar, mix dressing ingredients. Cover and shake well. Chill until serving time.

Makes 8 servings
