Lettuce and Apple Salad

Friends and family are always the best source of recipes (I can't pick out the good ones on my own). This dish reminds me of good times with friends. We were having several friends over for a summer dinner, and one of them brought this salad. It’s been a hit ever since. It's a staple for lunches and dinners at home or with friends (and I can’t mess it up!).



  • ½ cup olive oil
  • ½ cup sugar
  • ⅓ cup red wine vinegar
  • 2 tbsp poppy seeds
  • 1 tsp yellow mustard
  • ½ tsp salt


  • 1 head red leaf lettuce
  • 1 head green leaf lettuce
  • 2 apples
  • ½ cup shredded Swiss cheese
  • ½ cup cashews
  • Chopped grilled or roasted chicken, optional


  1. Combine all dressing ingredients and shake well.
  2. Tear lettuce. Cut apples into bite-size pieces. Add ingredients as listed above.
