
Jaimie's Famous Fat-Free Banana Bread

I started working for Up With People, an international, educational nonprofit organization, right after school. I travelled every 3-6 weeks to a different city in North America. This recipe was given to me by a host family I lived with in Farmington, ME. I loved the idea that the recipe called for applesauce instead of shortening, therefore making it fat free. The applesauce also makes the bread so moist. I started adding chocolate chips. It was so good and extremely easy to make. It turned into my "go-to" recipe for every occasion. Maddy, my 11-year-old says I’ve made it "a billion" times. She started helping me years ago and now she bakes it herself.

Ingredients:
- 3 bananas
- ½ cup applesauce (if sweetened, then half sugar)
- 1½ cups flour
- 1 cup sugar
- 1 tsp baking soda
- 2 eggs
- 1 tsp vanilla
- Chocolate chips (optional)
Directions:
- Mash bananas.
- Mix all ingredients together. Add chocolate chips.
- Grease muffin or loaf pan and bake 35–45 minutes at 350°F. Check with toothpick. Enjoy!
