Lemon Torte Bars

Susanne Michalek, Digital Project Coordinator

There really isn't any story behind it besides the fact that they are GOOD! These bars are like the upgraded version of a lemon bar. Every part of this recipe is homemade…from the crust to the decorated frosting to top it off. The "torte" part of the bars makes the treat even richer and more decorative looking than an average bar.

  • 2¼ cups flour
  • 1 cup powdered sugar
  • ½ cup brown sugar
  • ¼ tsp kosher salt
  • 2 cups butter

Lemon Filling

  • 3 eggs
  • 2 cups sugar
  • ¾ cup flour
  • ½ cup fresh lemon juice

Lemon Torte Bar Topping

  • 8 oz cream cheese
  • ⅓ cup fresh lemon juice
  • ⅔ cup sweetened condensed milk
  • 1 cup powdered sugar
  • Zest of 1 lemon and powdered sugar to garnish

  1. Preheat oven to 350°F. Spray a 9 x 13-inch pan with cooking spray.
  2. Mix together flour, powdered sugar, brown sugar and salt in a large mixing bowl. Cut in butter to make a crumbly dough.
  3. Press dough into the pan with clean hands until the pan is covered.
  4. While the crust is baking, make the filling. With a whisk, blend together eggs, sugar, fresh lemon juice and flour.
  5. Pour filling over crust and return to oven for an additional 20–25 minutes.
  6. Remove from oven to cool and cut into bars. Add lemon torte topping.
