Pumpkin Pie Cake

My mom made it during Halloween and it became such a hit that now every year I make it. Who doesn't love pumpkins?!?!?!


  • 1 32-oz can pumpkin
  • 4 eggs, slightly beaten
  • 1 12-oz can evaporated milk
  • 1½ cups sugar
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ginger
  • ½ package yellow cake mix
  • ¾ cup margarine, melted


  1. In a large bowl, mix the pumpkin, eggs, milk, sugar and spices. Pour into a greased 9 x 13-inch glass dish. Sprinkle dry cake mix on top and drizzle margarine over the cake mix evenly.
  2. Bake at 300°F for 1 hour and 20 minutes or until knife comes out clean. Serve with whip cream or Cool Whip (optional).
