
Pumpkin Pie Cake

My mom made it during Halloween and it became such a hit that now every year I make it. Who doesn't love pumpkins?!?!?!
Ingredients:
- 1 32-oz can pumpkin
- 4 eggs, slightly beaten
- 1 12-oz can evaporated milk
- 1½ cups sugar
- 2 tsp cinnamon
- 1 tsp nutmeg
- ½ tsp ginger
- ½ package yellow cake mix
- ¾ cup margarine, melted
Directions:
- In a large bowl, mix the pumpkin, eggs, milk, sugar and spices. Pour into a greased 9 x 13-inch glass dish. Sprinkle dry cake mix on top and drizzle margarine over the cake mix evenly.
- Bake at 300°F for 1 hour and 20 minutes or until knife comes out clean. Serve with whip cream or Cool Whip (optional).
